Cooking salted mackerel is a skill which combines skill & judgement for a good balance in the taste.Too little or too less either way could be a very distasteful experience. Preparation is key and here's what you need:

1 packed of salted mackerel not (fresh)

2 onions

3 sweet peppers

1 bunch of thyme

1 bunch of spring onion

2 cloves of garlic

1 small stick of ginger

3 large tomato

First to save time unwrap the salted mackerel and put into a pot and boil for 15-20 minutes. Your doing this to remove the salt embedded in the fish.while that's boiling start prepping the onions, sweet peppers,spring onion,crush the garlic and chop finely the ginger and tomatos & the thyme.when that's all done and the mackerel has boiled for about 20 minutes drain the water and let it cool down before taking out the bones and removing the head. Once flaked into chunks get a nice size pan to start frying with some oil to cover the pan well. When the pan is sizzling hot start putting onions, tomatoes,sweet peppers,spring onion, garlic & ginger to cook down. Turn the fire low and cover the pan and leave for a minute then add the mackerel by scattering the chunks across the pan. Cover for five minutes, still on a low heat, and then it's ready.
